Yeast SafCider for unique cider

Cider is a fermented beverage made from juice or fruit (most commonly from apples). This is a drink popular with young people, in tune with the trend of developing alcoholic beverages in the world.

To meet the needs of diversifying cider styles, Fermentis has successfully researched and developed the SafCider yeast line with outstanding properties, which can be used in a variety of fermentation conditions with a wide temperature range from 10-30C. These products have different flavor styles, suitable for difficult fermentation conditions and high sugar content: 

SafCider AB-1: The perfect choice for a well-balanced cider taste

Suitable for all ciders fermented from fresh or concentrated apple juice

The delicate aroma features a balanced combination of fresh apple aromas and apple pulp

Good settling capacity, low nitrogen requirement, very good assimilation of fructose, high malic acid consumption

Average 2-phenylethanol and isoamyl acetate production

Dosage: 10-20 g/hL for the first fermentation, 30-40 g/hL for prise de mousse 

 

SafCider AS-2: The yeast that gives the cider a sweet, complex flavor

Suitable for production of sweet and dry ciders from fresh and concentrated apple juice

Fresh, delicate aroma of apple and sweet citrus fruit

Good settling capacity, low nitrogen requirement, good assimilation of fructose, medium malic acid consumption

Produces 2-phenylethanol and isoamyl acetate on average, with a good balance between acetate (amylic) and fruit ethyl esters

Dosage: 10-20 g/hL for the first fermentation, 30-40 g/hL for prise de mousse

 

SafCider AC-4: The ideal product to produce Fresh – Crisp Cider

Suitable for the production of all types of cider from fresh juices or concentrates

Features a fresh aroma, rich in apple and floral flavors, enhancing the feeling of freshness

Good settling capacity, good assimilation of fructose

Low malic acid consumption, moderate 2-phenylethanol and isoamyl acetate production. Produce more fruit ethyl esters

Dosage: 10-20 g/hL for the first fermentation, 30-40 g/hL for prise de mousse

 

SafCider TF-6: The yeast that gives the cider the maximum fruit flavor 

Suitable for sweet ciders made from fresh apple juice

The aroma intensity is very high, complex, fresh of fruits (apple, banana – pear, citrus) combined with apple flavor, candy flavor, enhancing the feeling of sweetness and fullness on the palate.

Very low acetaldehyde and SO2 production, high malic acid consumption (up to 1.4g/L)

Requires high nitrogen content

However, the fermentation time is long, not suitable for Vietnamese tastes.

Dosage: 20-40 g/hL
